This weekend was quite hectic. Hubby and I worked on getting the new brooder completed for our new meaties, turkeys and Brahmas and then Homesteader Hubby went and picked up all the wood we needed to start our new bathroom floor. With all the busyness, we did manage to squeeze in a little fun on Saturday. The older kiddos went to the pool and Homesteader and our 10-year-old went fishing.
While they were gone, me the girls whipped up a special treat that I knew everyone would love, homemade mini-fruit pies. Yum! Yum! Yum! They were quick and easy and had Homesteader and our boy not arrived home when they did, they would have all been gone. It’s an amazing feeling when your family truly enjoys the goodies you make them and we may just include them in our list of bakery items when we become part of our local Farmer’s Market.
Homemade Mini-Fruit Pies
This will make one large pie crust or 4 mini ones. I made apple, cherry and blueberry. But you can use any kind of fruit filling your heart desires.
1 1/4 c. flour
1/4 tsp. salt
1/2 c. chilled, diced butter
1/4 c. ice water
1 egg white
1 pint homemade or 1 large store-bought can of pie filling
In a large mixing bowl, combine flour and salt
Cut in butter with 2 knives or by using a food processor until mixture is coarse crumbs
Stir in water a little at a time, mix until dough turns into a ball
You can use right away or wrap and refrigerate overnight
Roll dough out on floured surface. I use a cereal bowl and cut 4 mini-pies out of the dough
Fill with fruit filling, coat edges with egg white, fold together and use a fork to help seal the edges
Brush with egg white
Bake 20-25 minutes until golden brown
